Norman J. Temple, PhD, is originally from London, England, and lives there now. He lived in Canada for many years.  He was the professor of nutrition at Athabasca University in Alberta, Canada and is now a professor emeritus. His courses are taught by distance education and are taken by a thousand students a year across Canada. He has published 100 papers, mainly in the area of nutrition in relation to health. This includes research in Cape Town on the role of the changing diet in South Africa on the pattern of diseases in that country, such as obesity, diabetes, and heart disease. He has also been highly active in publishing books. Together with Denis Burkitt he coedited Western Diseases: Their Dietary Prevention and Reversibility (1994). He coedited Nutritional Health: Strategies for Disease Prevention (2023), Beverage Impacts on Health and Nutrition (2016), Community Nutrition for Developing Countries (2016), Nutrition Guide for Physicians and Related Healthcare Professionals (2022), and Excessive Medical Spending: Facing the Challenge (2007). Dr Temple’s work has achieved much impact internationally.

Ted Wilson, PhD, is a Professor of Biology at Winona State University in Winona, Minnesota. His research is primarily devoted to understanding the effects of cranberry juice and other common foods on cardiovascular disease, antioxidant capacity, glycemic control, and weight loss effects related to the consumption of low-carbohydrate diets. He also maintains an interest in the physiological mechanisms responsible for acclimation to high altitude and the physiology of cardiac function. He has 48 peer-reviewed publications and has edited/co-edited 8 books. He has co-edited several books with Norman Temple on the topic of human nutrition in health and disease. He teaches courses in nutrition, cell biology, cardiac physiology, human physiology, and anatomy.
